Seeing the type of anime you like I really think you should watch Mob Psycho 100, its finished , it has great animation and most of all it is very well written, in fact it was the only anime I liked more then Berserk and FMA which all three are considered master piece.

You should probably finish Dungeon Meshi, there's a neat development of the plot at the end of season 1. Manga is also finished, and everything concluded fantastically.

I think you would love Orb: On the Movements of the World and Vinland Saga. Vinland Saga's anime isn't finished but the manga is and it is truly fantastic. Both are very well written historical fiction. Orb has one of the best antagonists I've ever seen in a piece of media, Vinland Saga's tonal shifts to illustrate its core message are very effective, and both just generally have incredible character writing

I'd highly recommend Vinland Saga and Apothecary Diaries.

I think you would love "Baccano". You may have to pirate it to watch it.

I think you'd really like Pluto (very interesting take on a future where humans and robots co-exist), Mob Psycho 100 (super cool animation, unique characters and psychological depth. And it's fun!) and Psycho-Pass (what would happen if crimitality was a factor that could be measured in people, and how it would affect society. Season 1 can be considered self-contained)
